Canning Butter is something I have read a LOT about recently, and I figured- "Hey, I tackled cheese, why not butter?"
So I have spent HOURS researching this on the internet, and wading through site after site of pros and cons, but I have decided "Chef Tess" says it best. She backs her claims up with science, not opinion and she really knows her stuff.
So for now, I will not be canning butter :( Sigh...it seemed like such a GOOD idea. :( Oh well. On to the next item on my list,
PICKLES-- I got pickling cukes on sale yesterday (in NOVEMBER) for .25 a lb so I couldn't resist buying about 15 lbs of them. I'll be canning them tomorrow!
